I have a sweet tooth. I love baking. I love just about anything sweet.
But sugar is bad for you :(
I've been reading up/researching about sugar for several years now, but only recently quit coca cola for good...and still love baking with sugar! I am a bad case of knowing what I should do but not being willing/ready to make any real changes.
On the 12WBT program you're really not given much scope to include sugary treats (although don't get me started on the amount of sugar that's often in 'low fat' foods!). However, I have taken my calorie restriction as a bit of a challenge to find 'healthier' options when it comes to baking ;) I'm pretty sure that's bending the rules somehow....
Anyway...most of it has been a total flop. It seems that when you're used to baked goods tasting a certain way, any other way just doesn't cut it :(
BUT - tonight I had a small success!!! I made these breakfast cookies (altho I don't really intend for them to be a breakfast item lol):

I made some changes to the original recipe for a couple of reasons:
~ I left out the peanut butter because I was hoping I could eventually make them for school snacks, and used 2 whole bananas instead
~ I used frozen raspberries instead of dried cranberries. I smashed them up with the wet ingredients, and the flavour didn't come through as strongly as I would like so next time I think I'll add more :)
~ I was feeling particularly naughty so I added some white choc chips :) and they seemed to really add a level of awesomeness...probably something to do with the sugar in them ;)
~ I also used normal wholemeal flour and apple puree
Another thing I loved about them is that they're really quick and easy to make. I had all those ingredients on hand and the clean up was quick. What's not to love!?!
